Our Verdict

Edison's is a rising star in Fort Collins' ice cream scene. Creative flavors, a great Old Town location, and gluten-free options make this a must-try.

The Craft Newcomer

Edison's Ice Cream has carved out a devoted following on North College Ave in Old Town. Located at 172 N College Ave, this small-batch shop has built its identity around creative flavors, quality ingredients, and a welcoming atmosphere that makes every visit feel like a discovery.

Walk in and the first thing you notice is the case — a curated selection of flavors that changes with the seasons. This is not a shop trying to overwhelm you with 40 options. Edison's keeps it tight and intentional, and every flavor in the case is there because it earned its spot.

The Flight Experience

Where Edison's truly distinguishes itself is the ice cream flight. Four small tasting portions, served together, so you can sample across the menu without committing to a single scoop. For a first visit, this is the move. It turns ice cream from a quick transaction into an actual tasting experience.

The flights also reveal the range. You might get a rich salted honey with crunchy honeycomb alongside a bright fruit-forward seasonal flavor, and both are excellent in completely different ways. That kind of creative range is what separates a craft shop from a place that just sells ice cream.

Gluten-Free Done Right

Edison's earns real points for their gluten-free options. The GF ice cream sandwiches have been a hit — one reviewer called them "wonderful" after a first visit. For anyone navigating celiac or gluten sensitivity, finding a shop that takes GF seriously (not just as a label on a sorbet) is meaningful. Edison's treats it as part of the craft, not an afterthought.

Dairy-Free That Earns Its Reputation

The dairy-free options at Edison's have generated some of the most enthusiastic reviews we have seen for any Fort Collins shop. One Google reviewer called it "the best dairy free ice cream I've ever had" — and that is not a throwaway compliment. Edison's approaches their plant-based flavors with the same craft mindset as their dairy lineup. The result is dairy-free ice cream that stands on its own rather than apologizing for what it is not.

The selection is curated rather than massive. You will not find 18 dedicated vegan flavors here. What you will find is a smaller number of dairy-free options, each made to be genuinely great. Quality over quantity — and the reviews back that up.

The Old Town Location

Edison's sits on North College Ave, walkable from the heart of Old Town. The space is inviting and the staff consistently earns praise in reviews for being friendly and knowledgeable about what is in the case. On weekend evenings, lines can build — a good sign for a newer shop still establishing itself.

The location puts Edison's in the orbit of the Old Town ice cream cluster, making it an easy addition to any ice cream walk through the area. It is close enough to the action without being in the thick of the tourist traffic on South College.

Creative Seasonal Rotations

Edison's rotates flavors seasonally, which keeps regulars coming back to see what is new. The salted honey with honeycomb has become a signature, but the menu shifts enough to reward repeat visits. This is a shop that is still experimenting, still evolving — and that creative energy shows in the product.

Our Verdict

Edison's Ice Cream earns its spot at number six with craft quality, creative flavors, and a genuine commitment to dietary options that matter — gluten-free and dairy-free in particular. The flight experience is unique among Fort Collins ice cream shops, and the small-batch approach means everything in the case is made with care.

For the full traditional ice cream experience with the widest variety, we would still point you to Glacier Ice Cream up the road on North College. But Edison's is a rising star that is earning its reputation one scoop at a time — and the reviews suggest it is only getting better.

First visit today and it was just wonderful. We got a gluten free lemon ice cream sandwich and a flight with 4 flavors to try. The location is beautiful, the staff was absolutely fabulous, and the ice cream was soo good.
